How to store your Microgreens


Store your microgreens in the fridge in a closed container
Keep your microgreens fresh

As all types of vegetables, Microgreens will last longer if you store them properly. Mantaining moisture and temperature are key parts of keeping your microgreens fresh and crunchy.

We recommend you keep our Microgreens in their clamshell well closed or you can put them in a zip bag with a slightly dump paper towel to keep them with a small level of humidity in the container. Remember to keep them in the fridge in a cool temperature. The best temperature will be 35°F ~ 45°F.

If you store your microgreens this way, you should expect them to stay good in your refrigerator for up to two weeks or more.

Here are some extra tips to keep you microgreens as fresh as possible:


1) Keep them cool to maintain the freshness and crunchiness

Try to keep your microgreens in the fridge until right up until they need to go on to your plate. Having your microgreens sitting in the counter can cause them to dehydrate and wilt before you get to serve them.


2) Keep them loosely packed

Give them space to breathe and don’t cram them into a small container. This way you will avoid sogginess and wilting.


3) Keep them out of sunlight

Microgreens love light when they are growing. But once they are harvested is important to keep them out of direct sunlight. Exposing your harvested microgreens to direct sunlight can alter their taste, texture and appearance.


4) Wash them with care

We grow our microgreens (with no soil) In a clean and as inocuent environment as possible to give you the best quality possible, but you have to understand we are humans and we can make some mistakes. We wash some of our microgreens before packing. We do eat them without previously washing, but for health reasons we recommend you to wash your microgreens before eating them.

Please remember this are baby plants and you have to treat them with care. You don’t need to drown them. Just lightly rinse in cold water and then gently run them through a salad spinner to dry them off (if you got one) or just put them over paper towels to dry them easily.

It is a good idea to wash your microgreens right before using them. Don’t wash them before storing them in the refrigerator because this extra moisture can deteriorate more quickly.


5) Wait to harvest until you need them

Here in Mighty Greens we normally sell fresly cut microgreens the day before they get to your hands but you can also buy them in living trays if you wish. Why harvesting and keeping them in your fridge if you can eat them directly from the tray? Just note that most of the microgreens species can last a couple of extra days in the tray as microgreens, after that they will grow to much and will change their texture and flavor. If you acquire them on out clamshells you will have microgreens that are harvested in the perfect moment so you can enjoy them as best!


6) Harvest with a clean and sharp tool

In case you would preffer them in living trays, It is important that you harvest them with a clean and very sharp tool (knife or scissors) so you won’t bruise or infect your microgreens. You can cut them as low as you want but remember to leave the root at the tray. We don’t recommend to eat the roots.
